I love chips. These delicious cauliflower chips will blow your socks off.
Chips are my favourite snack, I have no self control when I have bag of delicious ketchup chips in-front of me. I am a sucker for a bag of chips. The problem is that when I overindulge in a snack I know isn’t good for me, I feel like crap afterward. I always end up regretting it and asking myself why I didn’t just have a small bowl or why I even picked up chips in the first place. I know I don’t have self-control over those addicting, delicious ketchup chips. I can eat an entire bag on my own. ( I only share a little lol )

This is a great substitute if you’re craving wings. No, they don’t taste like chicken but you can coat them in a delicious buffalo sauce and dip them in ranch and it will kick that craving for some wings. Promise! These cauliflower bites are again, easy to make, they don’t take much effort and they’re guilt free.
Food and the Way We Feel
Snacking on foods like these doesn’t leave me feeling guilty or feeling like I need a nap. lol I don’t know what it is but if I don’t eat a lot of fruits and veggies I just feel down and I lose energy. I guess I do know why, good foods like fruits and vegetables fuel your body and give you the energy you need. Eating better is one of my goals and so far 2020 seems to be on track. I have been eating less meat, and sugars, more veggies and more fruit and it feels good.
I find my mood is greatly affected by what I eat. If I eat the right amount and keep it healthy I feel great, if I over indulge, eat stuff that is full of sugar or if I eat too much meat I just don’t feel like myself. I just want to mope around and I feel so lazy all day. Does food affect the way you feel? Do you notice a difference?
What You’ll Need
- 1 head of cauliflower
- 2/3 cup fresh grated Parmesan cheese
- 1 1/2 tsp garlic powder
- 1/3 cup shredded marble cheese
- Cheesecloth
- Chopped peppers* (if you’d like to add some extra flavour)
Instructions
Pre Heat your oven to 400F
1. Stem florets of cauliflower and add to a large pot of salted boiling water.
2. Boil florets until tender, this takes about 12 mins.
3. Strain under cold water for about a minute before transferring to the food processor or blender.
4. Pulse the florets in your chosen shredder until they become rice sized. Pour out onto layered cheesecloth and strain all liquid out.
5. In a medium mixing bowl combine ingredients and mix well.
6. Scoop mixture into little balls and place on a parchment lined baking sheet.
Once baking sheet is full, flatten the balls into chips and bake for 18-22 mins until golden brown and crispy.
7. Serve immediately with your choice of dip.
Some Dip Suggestions
I love red hot. I will put that *h*t on anything! So good, I can’t get enough. Another one of my favourites is ranch. You just can’t go wrong! You could even use both at the same time! Coat your cauliflower chips with some red hot then dip them into some ranch. You can thank me later for that idea.
If you’re looking for a healthier dip try this amazing dip.
- 1 cup of greek yogurt
- juice from half a lemon
- dill
- salt and pepper
- 1 garlic clove
Mix it all together and use this to dip your cauliflower chips into. You can also use this dip for zucchini fries, sweet potatoes fries. Anything really!
